Recipe of the Week #77- White Chocolate Chip Oatmeal Cookies


White Chocolate Chip Oatmeal Cookies
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp vanilla
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/2 cups rolled oats
2 cups white chocolate chips

Preheat oven to 350 degrees. In a bowl, beat the softened butter, brown sugar, and white sugar. Add  eggs and vanilla. Mix well. Stir in the flour, baking powder, baking soda and salt. Fold in the oats and chips.
Drop by tablespoonfuls onto cookie sheets and bake for 9-12 minutes.

These are some tasty oatmeal cookies! My younger son said he thought they'd be better without the white chocolate, but this is the same child who sat down and ate a small bowlful of those same chips as I was baking. :) My older son ate them up like they were going out of style!
