Recipe of the Week #106- Rio Grande Rice Bowl



Rio Grande Rice Bowl
8 oz ground beef
1 cup chopped onion
1 Tbsp chili powder
1 tsp each ground cumin and garlic salt
1 cup raw white rice
1 can (14 1/2oz) corn, rinsed
1 can (15 oz) tomato sauce
2 small zucchini, diced

Cook beef, onion, and spices until beef is browned. Stir in rice and 2 1/2 cups water. Bring to a boil, reduce heat, cover, and simmer 10-12 minutes until rice is almost tender.
Stir in corn, tomato sauce, and zucchini. Cover and simmer another 8 minutes or more until rice and zucchini are tender.

Am I the only one who loves one pan dinners?!? This is another fantastic and super easy recipe. I love the flavor that the zucchini adds.
