Recipe of the Week#109- Skillet Chocolate Chip Cookies



Skillet Chocolate Chip Cookies
10 Tbsp butter, softened and divided
1/2 cup sugar
1/2 cup brown sugar
1 egg
2 tsp. vanilla
1 1/4 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
1 cup chocolate chips
vanilla ice cream

Preheat the oven to 350 degrees and use 2 Tbsp of the butter to grease the bottom and sides of a 9-inch cast-iron skillet.
Mix the remaining 8 Tbsp of butter and the sugars until light and fluffy. Add the egg and vanilla and beat until combined. Add the flour, baking soda, and salt mixing on low. Lastly, fold in the chocolate chips. Press the cookie dough into the greased skillet and bake for 20 to 25 minutes, until the edges are crisp and the cookie is golden and cooked through. Serve warm topped with vanilla ice cream.

I was intrigued by this recipe because my hubby is hooked on cast iron skillets. Which is kind of funny because he rarely cooks. :) We have three nice cast iron skillets, so I figured they better get some use.

This recipe was amazingly good. The ice cream really upped the "good" factor. My family loved this! My cast iron skillet will be seeing this recipe again!
