Blackberry Crumble Bars
2 1/4 cups flour
1 cup sugar
1/4 tsp salt
1 cup pecans, finely chopped
1 cup butter, softened
1 egg
3/4 cup blackberry jam/preserves (any flavor can be substituted)
Preheat oven to 350 degrees. Line a 9" square pan with foil and lightly grease.
Whisk together flour, sugar, salt, and pecans. Then add egg and butter and mix until mixture is crumbly. Set aside 2 cups of the mixture and pour the rest into the bottom of the pan. Press firmly and gently into an even layer. Spread the jam over this. Sprinkle remaining mixture over the top and spread it evenly.
Bake for 40-45 minutes, until lightly browned. Cool before slicing.
My hubby loves this recipe because he is a huge fan of cobblers and crumbles. I like this recipe because it uses jam which keeps it simple. This is simply a delicious treat!
