Recipe of the Week #195- Delicious Fried Chicken


Fried Chicken
2 cut up fryer chickens
1 qt plus 1/4 cup buttermilk
5 cups flour
3 Tbsp Lawry's seasoned salt
2 tsp black pepper
2 tsp dried thyme
2 tsp paprika
1 tsp cayenne pepper (or to taste)
1/4 cup milk
veggie oil for frying

Rinse the chicken, then thoroughly soak it in a quart of buttermilk in the fridge overnight. When you're ready to fry the chicken, remove it from the fridge and let it sit on the counter for about 30 minutes to take the chill off.

Preheat the oven to 350 degrees. Place the flour, and seasonings in a large bowl and stir together. In a small bowl, mix the 1/4 cup buttermilk and milk. Pour this into the dry ingredients and mix with a fork until there are little lumps throughout. This will stick to the chicken and make for a crispier breading.

Heat 1 1/2 inches of oil in a deep skillet over medium-high heat until a thermometer reaches 365 degrees. Lower the heat slightly to keep it from getting hotter.

Thoroughly coat each buttermilk soaked chicken piece with the breading, pressing extra breading onto the chicken if necessary. Place these pieces on a plate.

Add the chicken to the oil 3 or 4 pieces at a time. Make sure they aren't sticking together. Cover the pan and let fry for 5-7 minutes, checking to make sure they aren't getting too brown. Turn the pieces over, cover again and cook for another 3-5 minutes. Continue to monitor the temperature of the oil to make sure the chicken doesn't burn. The chicken will continue to brown as it finishes cooking in the oven.

Place the chicken on a baking sheet and continue frying the rest of the chicken. When it has all been fried, bake the chicken for 15 minutes to finish the cooking process.

I have never made fried chicken before and this stuff was great! Growing up, whenever we had chicken, it was good ol' KFC chicken. This is a repeat recipe at our house.
