Bacon, Egg, and Toast Muffins
12 slices white bread
1 4oz can green chilies
10 eggs
1 1/2 Tbsp half and half
1 1/2 cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
Use a large biscuit slicer to cut circles out of bread. Press into bottom of greased muffin tin. Spread chilies over bread. Mix eggs and half and half. Pour into each muffin cup. Top with cheese and crumbled bacon.
Bake at 350 degrees for 15-20 minutes.
Note: I left out the chilies, but added green bell pepper to my hubby's portion before cooking.
These are some tasty little muffins! Every Wednesday night, we have breakfast for dinner. These, along with some hash browns, made for a quick meal. These would be easy to prepare ahead of time for breakfast on the run, too.
