Recipe of the Week #17- Zucchini Bread

Zucchini Bread
3 eggs
1 cup vegetable oil
1 cup sugar
2 cups grated unpeeled zucchini
2 cups all-purpose flour
1 tsp baking soda
1 Tbsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg

Heat oven to 350 degrees and grease bread pan - I usually divide this recipe into two loaves.
Combine eggs, oil, and sugar in large bowl and whisk until well combined. Stir in zucchini with a rubber spatula.
In a separate bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir well. Pour dry ingredients over zucchini mixture and stir until well combined.
Bake for about 60 minutes.

Years ago, I got this recipe out of Family Circle magazine. My family loves it. The bread tastes so good, my boys forget that they're eating zucchini! I think it's the touch of nutmeg that makes it so good.
