Slow Cooker Cheeseburger Soup
2 lbs ground beef
2 cups chopped onion
2 cans (28 oz) fire roasted diced tomatoes, undrained
1/2 cup steak sauce
16 oz Velveeta cheese, cut into cubes
1 bag waffle fries
2 cups shredded lettuce
In skillet, cook beef until brown. Drain.
Spray slow cooker with cooking spray. In it, mix beef, onions, tomatoes, and steak sauce. Cover and cook on low for 8 hours or high for 4 hours.
Stir in cheese, cover, and turn slow cooker to warm. Stir occasionally while fries cook. Cook the waffle fries according to package directions.
Serve soup topped with lettuce and waffle fries.
Note: I used regular petite diced tomatoes and omitted the lettuce.
Fall's here, which for me means it's time for soup! This one really does taste like cheeseburgers. The waffle fries were a nice touch.
I bet it would be even better with crumbled bacon on top:)
