8 oz bacon, diced
1 cup diced yellow onions
1 cup diced carrots
1 cup diced celery
2 cloves minced garlic
4 cups chicken broth
3 15oz cans Great Northern beans, drained and rinsed
1 8 oz can tomato sauce
salt and pepper
Cook the bacon in a large pot until crisp. Remove with a slotted spoon to a paper towel. Discard all but 2 Tbsp of the bacon grease. To it, add the onion, carrots, and celery and cook over medium heat for about 5 minutes. Add the garlic and cook another minute. Add the chicken broth and beans. Add salt and pepper to taste. Bring to a boil, then reduce to low and simmer for 1 hour.
Remove half the soup to a blender or food processor. Blend until smooth. Return to the pot and stir into the remaining soup. Add the tomato sauce and 3/4 of the bacon. Stir to combine. Let soup simmer until heated through. Serve topped with remaining bacon.
My hubby and I love soup- this one was wonderful. Once you make this, you'll never eat Campbell's Bean with Bacon again!
