Recipe of the Week #73- Microwave Potato Chips


Microwave Potato Chips
3-4 baking potatoes
olive oil
salt and pepper to taste

Wash potatoes, then slice them into 1/8" rounds. Put rounds into large bowl and toss with a little olive oil, salt, and pepper. Coat a microwave safe plate (I used the plate in my microwave) with olive oil. Lay the rounds on the plate so they don't overlap. Cook on high for 2-3 minutes. Flip and cook another 2-3 minutes until the potatoes turn golden. Chips will crisp up as they cool.

These were DELICIOUS!! I couldn't keep up with how fast my kids were eating them! It was amazing how they tasted like potato chips- only better! They are definitely healthier than a bag of potato chips. We will be making these pretty often around here!

I wonder if you could do them in the regular oven? A bigger batch that way. I make the red potato chunks almost like that with olive oil and some onion soup mix ,,,,they too are awesome. Never though about making chips though
