Recipe of the Week #12- BBQ Porkchops in the Crock Pot

     This is a new Weight Watcher Crock Pot recipe I tried. It was very good! This photo shows my husband's plate- there is no way my boys would eat something covered in veggies like this!They did eat the pork chops, though. There's just something about pork and my family!

Barbecue Pork Chops

 8 (5 oz) bone-in center-cut pork chops (1/2" thick)
1/4 tsp pepper
1/2 cup thick-and-spicy honey bbq sauce
1 (14 oz) can no-salt added stewed tomatoes, undrained
1 (10 oz) pkg frozen vegetable seasoning blend

Trim fat from chops and sprinkle with pepper. Coat a large nonstick skillet with cooking spray; place over med-high heat until hot. Add chops and cook until browned on both sides. Coat Crock Pot with cooking spray and place chops in cooker.

Combine bbq sauce, tomatoes, and frozen veggie blend, stirring well; pour mixture over chops. Cover and cook on high-heat setting 4 hours. Or, cover and cook on high-heat setting 1 hour; reduce to low-heat setting, and cook 7 hrs.

Note: instead of stewed tomatoes, I used a big can of petite diced tomatoes.

This was a very good recipe. My family agrees that it is a repeat recipe!
