Recipe of the Week #197- Pumpkin Bars with Cream Cheese Frosting

Pumpkin Bars with Cream Cheese Frosting
1 2/3 cups sugar
4 eggs
1 cup canola oil
1 can (15 oz) pumpkin
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda

Preheat oven to 350 degrees. Grease 9"x 13" pan.
Mix sugar, eggs, oil, and pumpkin until fluffy.
Mix dry ingredients in a separate bowl. Add to wet ingredients and stir. Pour into pan. Bake 30 minutes. Cool before frosting

Frosting
1 pkg cream cheese, softened
1 stick butter, softened
3-4 cups powdered sugar
1-2 tsp vanilla

Combine cream cheese and butter until smooth. Slowly add sugar until you reach the desired consistency. Add vanilla. Spread over bars.

These are so incredibly delicious. The pumpkin isn't overpowering and the cinnamon adds a nice touch. They're the perfect treat for this time of year!
