Recipe of the Week #85- Peach Cobbler


Peach Cobbler
1 box yellow cake mix
⅓ cup butter
2 large eggs
29 oz peaches, canned or fresh
8 oz cream cheese
1/3 cup sugar
1 tsp vanilla extract
 
Preheat oven to 350 degrees. Spray a 9"×13" glass dish with cooking spray.
 
Mix cake mix, butter, and 1 egg until crumbly. Keep 1/2 cup crumble separate for topping. Press remaining crumble into base of dish. Bake for 10 minutes.
Slice peaches into 1 inch pieces.
Beat together cream cheese, sugar, 1 egg, and vanilla until creamy.
Layer peaches on top of baked crust. Spread cream cheese mixture on top of peaches.
Top with reserved crumbs and bake for 30 minutes.
This had a different texture than what I'm used to in a cobbler. I think it's because of the cream cheese, but it was still very good. Can anything with cream cheese be bad?
My hubby is a HUGE cobbler fan and he gave this a thumbs up.

Oh my everyone knows peach cobbler is our ultimate dessert for Mr. S. and me...I have a few recipes and cannot wait to try this one, it looks so delish...yummy ...Phyllis
