Recipe of the Week #88- Baked Zucchini

Baked Zucchini
1 zucchini
olive oil
shredded Parmesan cheese
salt and pepper, to taste

Cut zucchini in half lengthwise. Drizzle with olive oil. Add salt and pepper. Sprinkle with Parmesan cheese. Bake 20-25 minutes or until zucchini is tender.

This is super easy- I almost feel like I'm cheating by posting this as a recipe, but my hubby and I enjoyed it so much, I hate not to share!
