1 1/2 sticks unsalted butter, melted
1/2 cup sugar
3/4 cup brown sugar
1 egg plus 1 egg yolk
2 tsp vanilla
1 tsp baking soda
1 1/2 tsp cornstarch
1/2 tsp salt
2 1/4 cups flour
3/4 cup butterscotch chips
1/2 cup Reese's Pieces
Mix the flour, baking soda, cornstarch, and salt. Set aside.
In a larger bowl, whisk the melted butter and sugars. Whisk in the egg, then the egg yolk. Whisk in the vanilla. Add the dry ingredients to the wet and stir. The dough will be soft, but thick. Fold in the butterscotch chips and the candy. Chill the dough for 2 hours.
Roll the dough into balls, about 3 tablespoons of dough each. The balls should be taller than they are wide to ensure that the cookies will bake up thick. Only place 6-8 balls on a cookie sheet. Bake the cookies for about 11-12 minutes. They will look soft and under baked- they should continue to bake on the cookie sheet. Allow to cool on the cookie sheet for 10 minutes.
These cookies were delicious. My hubby's favorite candy is Reece's Pieces, so I knew he'd love them. I love how thick and soft they were. These are a repeat recipe at my house!
