3-4 boneless, skinless chicken breasts
salt and pepper to taste
1 cup corn starch
2 eggs, beaten
1/4 cup oil
Sweet and Sour Sauce
3/4 cup sugar
4 Tbsp ketchup
1/2 cup vinegar
1 Tbsp soy sauce
1 tsp garlic salt
Preheat oven to 325 degrees. Cube chicken into bite size pieces. Add salt and pepper to taste. Coat in corn starch, then dip in the eggs.
Heat oil and lightly brown the chicken, but don't cook it all the way through. Place on a greased 9"x 13" baking sheet. Mix Sweet and Sour Sauce and pour over chicken. Don't worry about the strong vinegar smell; it will bake off.
Bake for one hour stirring every fifteen minutes.
Serve over your favorite rice.
This chicken was delicious! My family scarfed it up and we aren't even big eaters of Chinese food.
