8 slices of bacon
1/2 lb ground beef
1 pkg cream cheese, cubed
1 pkg shredded American cheese
1 can Rotel diced tomatoes and green chilies
2 Tbsp chopped fresh parsley
2 medium bell peppers, cut into strips
tortilla chips for dipping
Cook bacon until crisp. Drain on paper towels, and crumble. Reserve 2 Tbsp for garnish.
Brown beef. Drain and return to pan. Reduce heat to low. Stir in cheeses, Rotel, and crumbled bacon until well mixed and cheese starts to melt.
Pour into crock pot and cook on low for 2-3 hours. Sprinkle with reserved bacon before serving. Eat with your favorite chips.
This dip was absolutely amazing! It totally tastes like a bacon cheeseburger. My family ate up every bit.
