2 Tbsp olive oil
2 cloves garlic, minced
1/2 small onion, diced
1 1/4 lbs ground beef
1 taco seasoning packet
2 cups chicken broth
1 (19 oz) can enchilada sauce
2 1/2 cups rotini
2 cups shredded cheese
green onions for garnish
black olives for garnish
In a large skillet, saute garlic and onions in oil until softened. Add beef and taco seasoning. Brown beef. Add pasta, chicken broth, and enchilada sauce and bring to a boil. Reduce heat to low and cover. Cook for 15 minutes. Remove lid and let simmer for five more minutes. Stir in 1 cup cheese, then top with the rest of the cheese. Place lid on pot to allow cheese to melt. Garnish with olives and green onions.
My sixteen year old son made this by himself when it was his night to cook. It was delicious!
